For Sara Baker, owner and creative force behind Snack Time Sweets, pastry has always been about more than sugar and flour. It is a form of artistic expression—a place where flavor and craftsmanship come together to create something as meaningful as it is beautiful. What began as a dream shortly after pastry school has evolved into a distinctive wedding cake and dessert business known for designs that feel deeply personal and flavors that are every bit as memorable as the artistry on the outside. From romantic Lambeth piping and whimsical ruffles to handcrafted sugar flowers, abstract textures, and playful details inspired by a couple's own story, each creation is approached as a one-of-a-kind edible work of art.

But the experience extends well beyond the wedding cake itself. With everything from jams and curds to custards and fillings made from scratch, Sara brings the same creative spirit to flavor as she does to design—introducing couples to unexpected combinations and creating entire dessert experiences their guests will remember long after the last bite.

We spoke with Sara about her journey from pastry school to wedding cakes, the inspiration behind her signature designs and flavors, and why today's couples are embracing desserts that feel more personal, playful, and entirely their own.

Can you share the story behind Snack Time Sweets and what led you to specialize in wedding cakes and dessert experiences?

Snack Time Sweets has been a dream of mine since I was about 21 years old, shortly after graduating from pastry school. My background is originally in culinary arts, but I've also always had a passion for art. I see pastry as a different form of artistic expression, and that's what has always drawn me to cakes and desserts. They allow me to combine creativity, craftsmanship, and flavor into something people can experience and enjoy. I didn't begin specializing in wedding cakes until 2015, and I've been working in the wedding industry ever since. Although my career has taken me through different areas of the culinary world, I have always found myself coming back to cakes. What I love most about weddings is being able to create something that becomes part of one of the most important days in a couple's life. Every cake is an opportunity to create something beautiful, memorable, and personal, and I enjoy helping couples craft not just a wedding cake but an entire dessert experience their guests will remember.

How would you describe your design approach when creating a wedding cake, and how do you ensure each piece reflects the couple's unique style and story?

Recently, many of our couples have gravitated toward vintage and Lambeth-style cakes, and I absolutely love creating them. However, whenever we have the opportunity to design something completely custom, that's where I really enjoy pushing my creativity. I love incorporating color along with either fresh florals or handcrafted sugar flowers into my designs. I'm especially drawn to abstract and organic cake styles with a whimsical feel that still look clean, elegant, and cohesive. I enjoy bringing movement into my cakes through ruffles, texture, and layered details, and I'm always experimenting with different techniques to create something unique. Some of my favorite details are the ones that tell a couple's story, whether that's hand-piping lace inspired by a bride's gown or hand-sculpting beloved pets to accompany the cake. Those personal touches are what make each cake truly one of a kind. I think the key to creating a meaningful wedding cake is listening to my clients, understanding their vision, and translating their personalities into a design that feels authentic to them.

Flavor is just as important as design. Where do you draw inspiration for your cake flavors and pairings, and how do you guide couples in choosing something memorable?

My goal is always to create a cake that is just as memorable on the inside as it is on the outside. I think what sets our cakes apart is our creative flavor combinations and our commitment to making everything from scratch, including our cakes, jams, curds, custards, and fillings. I don't try to mask flavors. Instead, I want every component to shine while working together to create a balanced dessert. I base many of my flavor combinations on what I personally enjoy, seasonal ingredients, and the combinations I've found our clients love over the years. I also enjoy introducing couples to flavors they may not have considered on their own, and it's always exciting when they discover a new favorite during their tasting.

When making recommendations, I like to learn about each couple's personal tastes first and then build flavor combinations around their preferences. Cake tastings are one of my favorite parts of the process because couples often surprise themselves by falling in love with flavors they never expected to choose.

What are some of the most exciting or meaningful trends you're seeing in wedding cakes right now, and how are couples making their cakes more personal?

Vintage Lambeth-style cakes are definitely not going anywhere anytime soon, and heart-shaped cakes continue to be incredibly popular. We're also seeing a lot of long, rectangular cakes, interactive desserts, oversized tiramisus with "Just Married" written across the top, and dessert towers served in coupe glasses. Personally, I love seeing couples embrace colorful, abstract designs that feel artistic and unique to them. I'm also seeing more couples choose smaller display cakes paired with dessert bars offering a variety of sweets for their guests, instead of one large traditional wedding cake. One thing that has remained consistent is that many of our couples specifically seek us out because we exclusively use Italian meringue buttercream. They appreciate a buttercream that is silky, light, and not overly sweet while still delivering incredible flavor.

From the initial consultation to the final delivery, what does your process look like, and what can couples expect when working with you on their wedding day?

The best way to get started is to reach out via email or submit an inquiry through the contact form on our website. From there, I like to schedule a phone consultation to get to know each couple, learn about their wedding vision, answer any questions they may have, and ensure we're the right fit for one another.

After our conversation, I typically recommend scheduling either a pickup or a sit-down cake tasting. This gives couples the opportunity to sample different flavor combinations while we discuss design ideas, inspiration, and all of their options. Once they're ready to move forward, we'll finalize the design, sign the contract, and secure the wedding date.

On the wedding day, couples can expect us to take care of every cake-related detail. We coordinate delivery logistics with the couple or their planner, deliver and professionally set up the cake and desserts, provide and style any rental stands or pedestals needed for the display, and arrange fresh florals on the cake when provided by the florist. Before we leave, we make sure the entire display is photo-ready by adding any final finishing touches and ensuring every detail looks exactly as envisioned. Our goal is to make the experience seamless so couples can simply enjoy their wedding day while we bring their vision to life.
