Tucked into Wilmington's vibrant Cargo District, Blue Cup Roastery has become a destination for coffee lovers who appreciate exceptional quality without the pretense. What began as an opportunity to carry on the legacy of an established roastery has evolved into a thoughtfully reimagined business where every bean is carefully sourced, expertly roasted, and brewed with intention. Guided by owner Amy Heggen and her business partners, Blue Cup Roastery is built on a simple philosophy: great coffee should be approachable, affordable, and crafted with care. From meticulously developing roast profiles to fostering a welcoming community gathering space, Blue Cup is as much about connection as it is about the perfect cup. We caught up with Amy to learn more about the art of roasting, the inspiration behind Blue Cup, and why the Cargo District has become the perfect place to call home.

Can you share the story behind Blue Cup Roastery and what inspired you to take it over?

Blue Cup Roastery was an opportunity that found us. The previous owners were looking for someone to take over and devote the time and attention to coffee that they no longer could. I was given the opportunity to purchase the business and rebrand it into what it is today alongside my business partners.

From the beginning, our primary focus was to offer exceptional coffee in a way that felt approachable and affordable. We wanted to source quality beans, roast them well, and brew and serve every cup with care.

Can you take us behind the scenes of your roasting process—from sourcing the beans to developing the flavor profiles that define Blue Cup Roastery?

We work with green coffee suppliers who have strong, long-term relationships with the farmers they purchase from. That stability allows us to know what to expect when sourcing beans. Our suppliers provide detailed information about each coffee, including its region, growing altitude, processing method, and tasting notes once roasted. This gives us a solid foundation before we even begin roasting.

Once we've selected a bean that we believe will resonate with our customers, we sample roast small batches to determine its ideal profile—whether that's light, dark, or somewhere in between.

From there, we conduct a process known as cupping, where coffee grounds are steeped in small bowls and evaluated by slurping from a spoon. We assess the aroma, flavor, acidity, sweetness, body, and finish. If the coffee matches the profile we're aiming for, we move on to larger production batches and add it to our lineup.

All of our roasting is done on a Diedrich IR-12 drum roaster, where gas burners heat the rotating drum through both convection and conduction. We roast approximately 15 to 20 pounds per batch, with each roast taking around 11 minutes.

Coffee has an incredible ability to bring people together and become part of our daily rituals. What do you hope people experience when they enjoy a cup of Blue Cup coffee, and what makes your approach distinctive?

We hope every cup provides an opportunity to pause, savor, connect, and simply enjoy the moment. Many great coffee roasters and cafés strive to create that same experience, so our goal is to consistently meet the preferences of those who enjoy what we make while providing a welcoming space where people can gather, discover new flavor profiles, and share their love of coffee. We're also passionate about trying coffee from other roasters. It inspires us, broadens our perspective, and continually challenges us to improve the quality of what we do.

The Cargo District has become one of Wilmington's most dynamic hubs for independent businesses, makers, and creatives. What does being part of this community mean to Blue Cup Roastery, and how does the district's creative energy complement what you do?

Being part of the Cargo District has been incredibly beneficial because it allows us to focus on what we do best—coffee—while knowing our neighbors offer the variety that makes the district such a destination. Visitors can grab breakfast, pastries, lunch, or snacks nearby, browse unique local retailers, or visit one of the many salons and barbershops before stopping in for coffee. Those neighboring businesses bring both regular customers and first-time visitors through our doors. We also enjoy collaborating with fellow businesses through cross-promotions and community events. The seasonal festivals held throughout the year introduce new people to the neighborhood and create opportunities for visitors to discover everything the Cargo District has to offer.

For someone discovering Blue Cup Roastery for the first time, which coffee, roast, or experience would you recommend as the perfect introduction?

Our House Blend is the perfect place to start. It's the coffee we use for all of our espresso-based drinks, so ordering your favorite espresso beverage is a great way to experience our quality. If you enjoy flavored coffee, we make our own syrups in-house, including vanilla, brown sugar cinnamon, and clove, which are available year-round.

During the warmer months, we recommend our Fireside Blend for cold brew or our Front Porch Blend for iced coffee. We also rotate a selection of single-origin coffees, and we're always happy to help customers choose one to take home and brew themselves. I usually recommend starting with a style of coffee you're already familiar with. That way, you can really appreciate the differences and experience what makes our coffee unique.
